Are you ready America? Because we are ready to party for you! I love the summer, especially the patriotism of it. If I was hosting a party to celebrate our nation, here are a few of the details I would include.

I would fill an apothecary jar with beans to make a cute display of red, white and blue in the simplest form.

I would drink patriotic sangria…

Out of adorable mason jars with red, white and blue striped straws! The twine bow is a very cute touch to these.

And finally I would enjoy some ice cream with fruit on it but probably not before it dripped all over my hand because it is already so stinking hot.

I love when I see beautiful things in stores like Pottery Barn and realize I can copy them at home for either really cheap or free!

Several weeks ago, I was in Pottery Barn and saw these great displays. I loved it all and wanted to try my hand at recreating them for our dining room table. Since the weather here is already summer-like and we’re headed to the beach in a few weeks, I had no problem skipping over a spring table and moving straight into a summer one!

This big footed vase is actually from Pottery Barn but was super cheap. I found it right before our wedding and it was $15 instead of $80!! It was the deal of the decade and I have used it over and over – such a great purchase. The glass ball and starfish inside were both presents from my parents when they went to Florida last year. I love them!

This medium-sized container is from Target and is the perfect size for one of my spray painted toy coral pieces and another starfish from my parent’s trip to Florida. All of the random small shells I used in all three containers are ones I’ve had for a long time and collected at random stores each summer.

This last small container is also from Target and holds another DIY Faux Coral piece and lots of fun little shells. I love the way this all came together and how easy it was to mimic the expensive displays in the store. Score one for cheap and easy!

The only thing I had to buy for all of this was sand. For some reason I couldn’t find any of my old stuff so I purchased a bag of play sand at Lowe’s for $3.50. The smallest they had was 50 pounds – anyone need any sand? I have plenty leftover! 🙂

Great summer drink!

Summer is a great time to experiment with fun and fruity drinks! Pinterest has to be the best website because you can find all sorts of ideas, not just for home design, including this delicious recipe for the perfect summer drink. I saw this one and will be making it very soon! Enjoy:

Strawberry Mojito Cocktail Recipe
1.5 ounces of simple syrup
about 3 fresh strawberries
about 4-5 fresh spearmint sprigs (chopped if you prefer smaller mint pieces in your cocktail)
soda water
1/2 lime
2 ounces of light rum

1. In a chilled glass (about 10-12 ounces), muddle the simple syrup, strawberries and mint leaves together with the back of a spoon or muddler. Crush the strawberries and mint leaves well.

2. Squeeze the juice from the lime into the glass, add the rum and stir well. Fill glass with ice and top off with soda water.

3. Garnish with mint sprigs or strawberry slices. Makes 1 drink.

Simple Syrup Recipe
2 c Water
1 lb Sugar

1. Combine water and sugar in a medium saucepan. Heat until sugar is completely dissolved. Set aside to cool. After cool, store in refrigerator until ready to use.

My new favorite summer recipe has to be the Chicken BLT salad. There is no real “cooking” involved and it doesn’t take more than 15 minutes to prepare! It is perfect for those hot summer days when you need to eat something but don’t want anything too heavy or warm. It is also my new favorite go-to when I take dinner to friends with new little babies. They don’t have to warm it up and I don’t have to worry about it being hot when I deliver it!

I first saw this recipe in Cooking Light and have adapted it a little to make it easier and more convenient for myself. I definitely added some fat and calories to it but those don’t count in the summer…right? Below is my version. You can click HERE for the official recipe.

Ingredients
1 rotisserie chicken, picked off of the bone and shredded
1 tomato, cut into small chunks
1 (10-ounce) package romaine salad
6 center-cut bacon slices, cooked and crumbled
1 avocado, sliced and cut into small chunks
3/4 cup buttermilk ranch dressing

Preparation
1. Cook the bacon until it is crisp (This is the only “cooking” involved! I quote it because I just use the microwave for this step.)
2. Combine the first five ingredients in a large bowl.
3. Drizzle buttermilk ranch dressing over salad.
4. Toss well, serve and enjoy!

HINT: This goes very well with a glass of crisp and cold white wine or sangria!
